AVOCADOS STUFFED WITH TROPICAL STYLE SHRIMP

Ingredients
🥑🍤This dish is perfect for a light lunch, an elegant appetizer, or a refreshing dinner. The combination of juicy shrimp, the creaminess of the avocado, and the touch of TERANA spices will take you straight to paradise.
- 2 ripe but firm avocados
- 8.8 oz of cooked and peeled shrimp (fresh or frozen and thawed)
- 1/2 cup of ripe mango, diced small
- 1/4 cup of red onion, finely chopped
- 2 tablespoons of fresh cilantro, chopped
- Juice of 1 fresh lemon
- 1 teaspoon of TERANA Paprika
- 1/2 teaspoon of TERANA Ground Cumin Seed
- Salt and TERANA Ground Black Pepper to taste
- Lettuce leaves for serving (optional)
Directions:
1. If your shrimp are uncooked, cook them quickly in boiling, lightly salted water until pink (about 2-3 minutes). Drain and let them cool. Once cool, cut them into bite-sized pieces if they are too large.
2. In a medium bowl, mix the chopped shrimp, diced mango, red onion, and cilantro.
3. Add the lemon juice to the mixture as well as TERANA Paprika, TERANA Ground Cumin Seed, salt, and TERANA Ground Black Pepper to taste. Mix gently to blend all the flavors.
4. Cut the avocados in half lengthwise and remove the pit. With a spoon, gently scoop out some of the flesh from the middle of each half to make more room for the filling (you can add the removed flesh to the filling or save it for another recipe, like guacamole).
5. Generously stuff each avocado half with the shrimp mixture. If desired, serve the stuffed avocados on a bed of fresh lettuce leaves.
