TOFU MEATBALLS IN SAUCE

Ingredients

    Ideal for a vegan dinner, these tofu meatballs with sauce will help you go to bed feeling light. 💤

    + 3 1/2 oz of fine oat flakes
    + 1/4 oz of cornmeal
    + 4 1/2 oz firm smoked tofu
    + 2 1/2 oz of concentrated tomato paste
    + 1 onion
    + 1 teaspoon of sweet paprika
    + 1 teaspoon of TERANA celery salt
    + Ground black pepper
    + Nutritional yeast (optional)
    + Extra virgin olive oil
    + 2 tablespoons of chickpea flour
    + 4 teaspoons of water
    + Breadcrumbs

Directions:

1. Mix the oat flakes, cornmeal, paprika, ground black pepper, nutritional yeast, and TERANA celery salt in a bowl.
2. Add the tomato paste and mix the ingredients well. Set aside.
3. Crush the smoked tofu in a blender and chop the onion very finely. Add this to the cornmeal mixture. Mix well until you get a compact dough.
5. Mix the chickpea flour with water in a small bowl. Dip the meatballs and then coat them with breadcrumbs (you can skip the dipping and directly coat with wholemeal flour or chickpea flour).
6. Cook them in a frying pan with a little extra virgin olive oil, add your favorite sauce, and that's it!
