ROASTED CHICKEN WITH TERANA HERBS

Roasted Chicken with TERANA Herbs
- 1 whole chicken (approximately 3 lbs)
- 2 tablespoons of olive oil
- 2 tablespoons of TERANA Rosemary
- 1 tablespoon of dried TERANA Thyme
- 1 tablespoon of TERANA Ground Garlic
- Salt and TERANA Ground Black Pepper to taste
- 1 lemon, halved
Directions:
1. Prepare the marinade: In a small bowl, mix the olive oil, TERANA Rosemary, TERANA Thyme, TERANA Ground Garlic, salt, and TERANA Ground Black Pepper.
2. Marinate the chicken: Place the chicken in a marinating dish (if you have one) or directly into a heavy-duty plastic bag. Pour the marinade over the chicken, making sure to coat all parts, both inside and out. Massage gently so that the marinade penetrates the meat well. Marinate in the refrigerator for at least 30 minutes, or preferably overnight.
3. Preheat the oven to 350°F.
4. Grill the chicken: Remove the chicken from the marinade and place on a baking sheet. Squeeze the juice of half a lemon over the chicken. Roast in the oven for about 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers an internal temperature of 165°F.
5. Take the chicken out of the oven and let it rest for 10 minutes before slicing. This will allow the juices to spread evenly throughout the meat.
