PLANTAIN SOPES
Ingredients
- 🍌 Want to try something different and flavorful? These plantain sopes filled with mushrooms and beans are a unique combination that will surprise you. Perfect for treating yourself any meal! 🌮
- 3 ripe plantains
- 1 cup wheat flour or oat flour
- 1 tablespoon of salt
• 1 tablespoon of baking powder
• 9 oz of chopped mushrooms
• 1 cup finely chopped onion
• 1 garlic clove, minced
• 1 cup cooked black beans
• 1 serrano pepper, chopped
• 2 tablespoons of TERANA chopped epazote
• Oil
Directions:
1. In a liter of water, cook the plantains with everything and peel, once cooked, let them cool and mash them well.
2. Add the flour, baking powder, and salt, mix very well until you get a dough.
3. Let the dough rest for 10 min.
4. Assemble your sopes, fry them in enough oil and drain them on absorbent paper.
5. For the filling, put a little oil in a pan, once hot add the cup of chopped onion, chopped garlic and chili. When they change color add the mushrooms, season with salt and add the beans when the mushrooms are cooked, add the epazote, stir, lower the heat and cook for 10 min.
6. Carefully open the sopes halfway through using a knife and fill them in.
