CHICKEN CURRY WITH COCONUT AND CASHEWS
Ingredients
- 🥥🍗 Chicken Curry with Coconut and Cashews: a burst of flavor in every bite, and with the special touch of our TERANA spices!
This recipe combines the mildness of coconut with the intense flavor of curry and cashews, creating a tasty exotic dish.
- 4 chicken breasts, diced
- 1 chopped onion
- 2 cloves of garlic, minced
- 1 can of coconut milk
- 2 tablespoons of red curry paste
- 1 teaspoon of TERANA Ground Cumin Seed
- 1/2 teaspoon of coriander powder
- 1/4 teaspoon of TERANA Ground Cardamom
- Salt and pepper to taste
- 1/2 cup of roasted and chopped cashews
- Cooked basmati rice to complement (optional)
Directions:
1. In a large pot, heat a little oil and sauté the onion and garlic until golden.
2. Add the chicken and cook until golden brown on all sides.
3. Add the curry paste, cumin, coriander and cardamom. Cook for another minute so the flavors mix well.
4. Pour in the coconut milk and season with salt and pepper to taste.
5. Reduce the heat and simmer for about 15-20 minutes, or until the chicken is tender and the sauce has thickened.
6. Sprinkle with chopped cashews before serving.
Enjoy with steamed vegetables or basmati rice.
